SUPREME THANKSGIVING RECIPES:
ROASTED BUTTERNUT SQUASH
& SHALLOTS
ROASTED BUTTERNUT SQUASH & SHALLOTS
SERVES 6
PREP
TIME: Preheat
the oven to 475 degrees
INGREDIENTS:
4 Cups Diced Butternut Squash
10 Shallots
5 Tbs olive oil
2 Tbs brown sugar
1 Tsp salt
¼ Tsp pepper
Sheet Parchment Paper
Cookie Sheet
PREPARATION:
5 Shallots quartered lengthwise
2 cups of diced Butternut Squash
1 tablespoon of brown sugar
2 1/2 tablespoons of olive oil
1 teaspoon salt
1/2 teaspoon black pepper
Mix all ingredients together
Line Cookie sheet with Parchment or Baking Paper.
Put mixed ingredient on top
Bake in Pre-heated oven at 475° for 20 minutes.
ROASTED BUTTERNUT SQUASH TARTE
SERVES 6
PREP TIME: Preheat the oven to 400
Degrees
Bake for total time of 40 mins (10mins) then 30 mins
INGREDIENTS:
1 pound of Butternut Squash into cubes.
1 Red Onion, cut in large pieces.
Leaves of about 5 branches of Rosemary.
1-2 Tbs Balsamic Vinegar
2 Tbs Olive Oil
Dash of Sea Salt
Pre-made pie dough
1 Egg White
½ Cup Goat Cheese
Cookie sheet
PREPARATION:
Cut up about 1 pound of Butternut Squash into
cubes.
Then add 1 Red Onion, cut in large pieces.
Add leaves of about 5
branches of Rosemary.chopped them fine
Peel the cloves of one head of garlic, and cut
each clove into slices.
Add the Balsamic Vinegar
Toss in Olive Oil & Sea Salt
Put Squash mixture on a cookie sheet
And baked it at 400° for 30 minutes
Roll out your pre-made pie dough
Add the squash mixture to center and folded up
the sides.
Brush
the egg white and water over the edges.
Roast for 10 minutes, then add goat cheese.
Roasted it for an additional 30 minutes.
CAULIFLOWER CRUST PIZZA
CAULIFLOWER CRUST PIZZA
SERVES 6
PREP
TIME: s. Preheat the oven to 425 degrees 35 Minutes Total Bake (First 20 mins) then 12-15 min
INGREDIENTS:
Head of Cauliflower
1 ½ c Shredded Mozzerella Cheese
½ c Shredded/Grated Romano/Parmesean Cheese
2 Cups Chopped Broccoli Florets (Frozen is ok
if thawed in microwave and water removed)
1 Chopped Red Onion
1or ½ each Chopped Red & Green Peppers
Chopped Mushroom
2 Eggs
Dash of Garlic Powder
Dash Onion Powder
Parchment Paper
Pizza Dish/Cookie Sheet
Pizza Sauce or Spaghetti Sauce
PREPARATION:
Cut up a whole head of cauliflower and "riced" it in
the Vitamix. (a quarter at a time). Put the riced cauliflower in the microwave for 8 minutes.
Mix in 2 cups of grated cheese, mostly mozzarella and a little Parmesan.
Add 2 eggs
Dash of Onion powder
Dash of Garlic powder
Pepper
Salt-optional
Mix it up into a dough-like consistency and put it on an oiled cookie sheet lined with parchment paper.
Use a large spoon to smooth it out flat like a pizza crust, and put it in the oven at 400 degrees for about 20 minutes
Remove from oven add pizza sauce, red onion, red and green pepper, green olives, and cheese on it.
Return to oven for about 12 minutes.
Serve while hot.
